Optima annular tube ovens

Four OPTIMA

Galerie

Designed to meet today’s environmental and sustainable development expectations, the Optima Evolution can be further enhanced with FRINGAND’s ECO-TEC technology.

The results from this oven speak for themselves, offering greater economical and ecological benefits thanks to an integrated high-efficiency hearth, low-power burner, excellent rock wool insulation and very low chimney outlet temperatures.

Description

  • Fully stainless steel front (hood, control panel, work surface).
  • Halogen lighting.
  • 20-mm refractory cement slabs.

Advantages

  • Fast heat-up: 2 °C per minute.
  • High-performance steam generation.
  • Operates with very low “burner” power levels.

The annular tubes ensure perfectly consistent heating, their radiance producing excellent baking quality.
The OPTIMA’s all-metal design ensures working versatility and low energy use.

The tubes used are TU37B steel, 21.6 mm in diameter and 3 mm thick. Each tube is formed, then drilled on a numerically-controlled drilling bench before being welded then tested at a pressure of 400 bar to guarantee proper sealing. (The operating pressure is around 140 bar).

Heating system

We use seamless cold-drawn individual tubes (1) in the OPTIMA oven’s heating compartment to give a large exchange area, positioned horizontally for the most effective exchange with the baking chamber.

The transfer of energy between the hearth (2) and the baking chamber (3) is based on the phase change of the water and the natural circulation of the water/steam mixture in the tubes.

Standard equipment

  • Type 304 austenitic stainless steel front hood and work surface.
  • Hood with in-built steam extractor.
  • Stainless steel door handles with polished aluminium ball.
  • Dual halogen lighting on each level.
  • Upward-opening doors in tempered glass, heat resistant to a temperature of 350 °C.
  • Loading device and hanging rails.

Fully stainless steel swivelling control panel comprising:

  • Electronic temperature controller with cooking timer.
  • Automatic start-up clock.
  • Steam timing.
  • Automatic On/Off switch.
  • Manual On/Off switch.
  • Burner switch.
  • Lighting switch.
  • Steam extractor switch.
  • Steam injection push-buttons (note: the steam injection push-buttons are also located on the door handle side of the fascia strip).
  • Manual exhaust on each level.
  • Electronic control board with electric exhausts.
  • Integrated lifter on the front panel of the oven.
  • Pastry deck.
  • 1 or 2 independent electric levels.
  • Rear opening on 1 or 2 levels.
  • Stainless steel door cladding.
  • Brickwork façade.
  • Brickwork on 1 or 2 sides.
  • Downward-opening doors.

Olympic annular tube ovens

FOUR OLYMPIC

Galerie

The ultimate robust oven, designed to stand
the test of time!
The origins of Fringand’s technological development in annular tube ovens can be traced back to the Olympic.
Endurance and durability perfectly illustrate its now legendary features.

Description

  • Refractory cement slabs (25 mm thick).
  • Powerful cast iron block steam generators.
  • A static oven with no rotating part, no wear and no noise.
  • 100% French manufacture.

Advantages

  • Outstanding baking quality.
  • An even, crispy crust.
  • Uninterrupted successive batch loading.
  • Excellent insulation: 210 to 300 mm of rock wool.
  • Average energy use of just 2 kW/m2.
  • Minimal maintenance expense.
  • Exceptionally long service life.

With a double row of tubes on each level, and refractory hearth and ducts, the Olympic oven boasts a huge capacity and a seemingly endless base. The enormous storage capacity of its refractory hearth permits uninterrupted successive loading. Unsurprisingly given its size, the Olympic weighs between 10 and 15 tonnes.

The heating principle

The OLYMPIC oven comprises seamless continuous tubes meeting the requirements of TU 37 B. The tubes are guaranteed for 10 years.

These tubes are 21.6 mm in diameter and 3 mm thick. Each tube is cold-formed, then drilled on a numerically-controlled drilling bench before being welded then tested at a pressure of 400 bar to guarantee proper sealing. The lower part of the annular tubes is located in the heating area, i.e. in the masonry ducts.

This lower part of the tubes contains a very precise quantity of water that transforms to steam when the oven is heating up (using oil, gas or wood).
The water, now transformed to steam, flows evenly through all the tubes, ensuring that the oven is constantly heated.

Steam generation

Each level is equipped with cast iron block steam generators:

  • 1 device per level for 2-burner ovens
  • 2 devices per level for 3- and 4-burner ovens

The cast iron blocks weigh between 216 kg for the smallest model and 960 kg for the largest model.

Easy maintenance

  • The electrical and mechanical parts are accessible from the front.
  • Detachable up-and-over doors make maintenance straightforward.

Standard equipment

  • Electromechanical control panel.
  • Automatic start-up clock.
  • Push-button operated dual steam control (on both left/right columns).
  • Type Z 6 CN 18-09 austenitic stainless steel front, work surface and hood with anti-drip grill (French AFNOR standard).
  • Tempered glass up-and-over doors (10 mm thick) are heat resistant to a temperature of 350 °C and also thermal shock resistant. The glazing edges are sandstone polished for improved shock resistance.
  • Manual exhaust on each level
  • Special wood-fired hearth
  • Brickwork façade
  • Brickwork on 1 or 2 sides
  • Electric top level
  • Counterweight lift (column)
  • Scissor lift
  • Pellet burner

Special wood-fired hearth

Specially designed to be permanently heated by wood, this wood-fired hearth is built in the traditional way using refractory bricks, with a removable grill and ash pan: it takes 50-cm logs.

Particularly recommended for regions with plentiful supplies of timber, this model proves its worth where power cuts can spell disaster for production. This model can also be fitted with an oil or gas burner.
