Air intake and renewal system integrated into the oven

his principle guarantees very high heat exchanger reliability. It also reduces heat losses by using more than 85% of the heat produced, this saving energy.

This system creates a vacuum in the baking compartment so that it can be completely cleared of steam once baking is over. The dry atmosphere that prevails at the end of the baking time produces crusty bread.
Another advantage: The heat and humidity are not propagated throughout the bread oven. When the oven door is opened, air from the bread oven enters into the oven and not the other way round.
